Auckland does not begin and end at the harbour. The region stretches north into vineyard country and artisan towns, west into black sand coastline and ancient gannet colonies, and inland through landscapes that most visitors never reach.
Your morning is private and responsive. Your driver-guide knows this region deeply and shapes the day around what interests your party. Scenic coast, native bush walks, a stop at Muriwai to watch the gannet colony on the clifftops above the Tasman Sea, a drive through Karekare with its waterfall and wild black sand beach, or time in Matakana’s vineyard and artisan character.
There is no fixed script for the morning. That is the point. You arrive at the evening’s centrepiece rested, present, and genuinely oriented to the land you are about to dine in.
Lunch is at your discretion during the morning. Your driver-guide will point you to something worth stopping for.
Mamakan at Velskov operates on a single governing idea: the healthier the geography, the higher the gastronomy.
This is Gastro-Geography. A philosophy that holds that the land, not the chef, is the author of the meal. Every ingredient comes from the immediate environment: small farms, native forest, ocean. Hand-harvested, fire-cooked, and brought to the table without ceremony or performance.
No servers. No tweezers. No restaurant logic.
Your party arrives at Velskov’s Native Forest Farm in the Waitākere Ranges as the evening light settles into the canopy. Pita Turei, Māori elder and storyteller, presides over the evening as host and co-cook. He does not present the food to you. He cooks it alongside you, sharing the history of this land, the knowledge carried in the ingredients, and the stories that belong to this place while the fire does its work.
The meal is communal. The effort is shared. The memory is indelible.
Velskov sits on DOC-protected land, which means no liquor licence. If you want wine with your evening, bring a bottle or two of something you love. That choice belongs to you, and it fits the philosophy perfectly.
This is not a culinary experience. It is a food experience. The distinction matters. One is about the skill of the cook. The other is about the intelligence of the land it came from.
